Why compare Universal, Burgundy and Bordeaux?
These three shapes answer most first-purchase questions. Universal sits in the middle: enough room for serious wine, but compact enough for many styles. Burgundy pushes much further towards aromatic breadth. Bordeaux gives structured, tannic wines more air while remaining more focused than Burgundy.
At Zaltify we do not choose by grape or region alone. A cool, elegant Syrah can be excellent in Burgundy, while a ripe, concentrated Shiraz is usually better in Bordeaux. Chardonnay can also work in all three depending on whether it is mineral, rich, oxidative or phenolic.
What does the shape actually change?
The glass does not change the wine’s chemistry. It changes the conditions in which you perceive the wine: surface area, headspace, oxygen exposure, aroma concentration, temperature and the way the wine reaches your nose and palate.
- Universal: medium surface and a relatively focused opening - a balance of air and aromatic definition.

Choose Universal if you want focus, flexibility and one glass for many styles. Choose Burgundy if you want maximum aromatic breadth for Pinot Noir, Nebbiolo, Barolo, Barbaresco and rich, complex Chardonnay.
When is Universal the better choice?
For mixed collections, everyday use, Riesling, mineral Chardonnay, Chianti, rosé, lighter reds and complex sparkling wine. It is also easier to store and easier to place safely in a dishwasher.
When is Burgundy the better choice?
When the wine has enough aromatic complexity to use the 960 ml bowl: serious Pinot Noir, red Burgundy, Nebbiolo, Barolo, Barbaresco, elegant Syrah, complex Gamay and concentrated Chardonnay.
Is Burgundy too large?
For some people, yes. It is roughly 125 mm wide and needs real cupboard and table space. The size is functional, but a simple or very delicate wine can feel too open in it.
Can Universal handle Pinot Noir and Barolo?
Absolutely. We choose Burgundy as the starting point for complex Pinot Noir and Nebbiolo, but Universal is excellent if you prefer a tighter, more focused aromatic frame.

Zalto Universal vs Bordeaux
Choose Universal if you drink broadly. Choose Bordeaux if your cellar leans towards structured, tannic and concentrated wines.
Can Bordeaux be a better “universal” glass for red-wine drinkers?
Yes. If your reds are often Cabernet, Merlot, Rioja, Brunello, Syrah or Tempranillo, Bordeaux can feel more versatile because it gives those wines more room than Universal. If “universal” means red, white, rosé and sparkling from one shape, Universal remains the more complete solution.
Is Universal too small for Cabernet Sauvignon or Bordeaux?
No, but it is more compact. Bordeaux gives young Cabernet, serious Bordeaux and concentrated Ribera del Duero more surface and headspace, which helps tannin, oak, dark fruit and savoury notes separate more clearly.
Can Bordeaux be used for white wine?
Yes. We especially like it for full-bodied Chardonnay, orange wine and expressive whites with phenolic structure. For fresh Sauvignon Blanc and light Riesling, Zalto White Wine is our more natural choice.
What about Champagne?
A mature, vinous Champagne can be interesting in Bordeaux, but it is not our default. We normally choose Universal for complex, vinous sparkling wine and Zalto Champagne when freshness, precision and mousse are the priority.

If you only want one Zalto glass
For most people: Universal. Not because it is best for every bottle, but because it has the fewest poor matches across red, white, rosé, orange and complex sparkling wine.

- Assuming bigger is automatically better. A larger bowl can open a complex wine but make a simple wine diffuse.
- Choosing only by colour. Structure and aroma matter more than “red” or “white”.
- Thinking Burgundy only means Burgundy. It can be excellent for Nebbiolo, elegant Syrah and concentrated Chardonnay.
- Thinking Bordeaux only means Bordeaux. Rioja, Brunello, Ribera del Duero, Shiraz and structured whites can also suit it.
- Buying the specialist before knowing your wine profile. When in doubt, start with Universal.
